Shelf Life Testing

It is mandatory for a Food Business Operator (FBO)– Food Manufacturers & Packers to declare expiry date / shelf life of a packed food product i.e. “Best before” or “Use by” date as per FSSAI - Food Safety and Standards ( Labelling& Display) Regulations, 2018.

“Best before” means the date which signifies the end of the period under any stated storage conditions during which the food shall remain fully marketable and shall retain any specific qualities for which tacit or express claims have been made and beyond that date, the food may still be perfectly safe to consume, though its quality may have diminished.

A “Best before” date is applicable to food where deterioration affects the consumer acceptance without impacting health and safety. The physico-chemical & microbiological changes in food which will affect consumer acceptance are as follows.

Shelf life analysis is carried out for packed food in both accelerated and real time basis. GLCS guides the Food Business Operators (FBOs) in determining the shelf life of their food products and its effective usage for Nutrition Labelling as per FSAAI guidelines.
